#1. Lemon Cream Cheese Pinwheels

Okay, so it's not a cookie.. it's a smaller than usual pastry, but because these were made smaller the decision was made to start off the cookie 'madness' with these lovely puff pastry pinwheels. Super easy.. really, check out the recipe after these mouth watering pics.







Ingredients:

1 defrosted pack of puff pastry

1 small bowl of egg wash

Powdered sugar for dusting after baking

Cream cheese filling:
4oz cream cheese
1/4C sugar
zest of 1 lemon
2T lemon juice

Mix together in a bowl.

With a pizza cutter make as many squares as the pastry will allow, 3x3" is a good size. With the cutter cut on the edges of the square, about 1" in to the center, not cutting through, since the middle is where the cream cheese filling will go.
After all the squares have been cut, brush with the egg wash. Fill the centers with the filling, and fold every other 'flap' up toward the center, over the filling, then egg wash all those flaps. Sprinkle sugar over them, place on a baking sheet with parchment paper. Bake at 400F until golden, about 15 minutes.
