Three Berry Marmalade with Tangelo Zest and Juice

Marmalade is so easy to make. It can be flavored with anything, and it's so delicious. This time berries were used. Strawberries, blueberries and blackberries were put in a pot, along with sugar in the raw, lemon juice, tangelo juice and zest, vanilla extract, a cinnamon stick and a hint of sherry. Bring it all to a boil, cook for 10 minutes, then cool. Simple.

Vanilla Soufflé with Strawberry-Kirsch Coulis

I found the most amazing strawberries. Fresh from an organic strawberry farm, deep red, no white center, the perfect strawberry. So.. I decided to make a vanilla soufflé, with some lemon zest to highlight the succulent strawberry flavor. I put the fresh strawberries in a blender, added a little sugar, vanilla extract, some kirschwasser brandy.. and voilà.. delicious. The brandy adds another layer to the strawberries, and makes them pop more when eating the whole soufflé, sauce and cream combo. So it's basically a fancy version of a strawberry shortcake, but the soufflé is so light and airy.. and when is that not good? Exactly.

The Real Oreo Cookie

This cookie is made with dark cacao powder, and bittersweet chocolate, giving it that traditional dark oreo look, but with real chocolate flavor. Filled with a smooth, buttery, vanilla filling, this is the way an oreo was always meant to be. Of course this version is good with a cold glass of milk too!

Apple Cakelets with Apricot-Rum Glaze

These are so easy to make and they're very light and fluffy. Apple cubes are added into the batter, baked, then cooled a little topped with warm apricot jam, and a layer of rum glaze. Very easy to eat!

Raspberry Walnut Rugelach

This is such a delicious cookie. Cream cheese is in the dough, which makes it so flakey, plus the butter helps too. These cookies can be filled with anything, I decided on raspberry jam, brown sugar with cinnamon and toasted walnuts.

Pizza

Yeah we make pizza dough! This batch is half whole wheat and half white flour. it takes longer to double in size, but the result is delicious. Topped with fennel, tomatoes, fresh mozzerella and basil. Perfect.

Mixed Berry Crumble with Almond Cream and Streusel

This is always a favorite, everyone loves berries mixed in cinnamon, vanilla and sugar. The berries are put over almond cream, made with ground almonds, eggs, sugar and lemon zest, then the berries are covered with streusel. It is served warm with whipped cream and fresh vanilla or blackberry icecream.
