Cranberry Spice Cake

One of the most moist cakes I've had in a long time, this has a whole new level of moist, that is delicious. Made with whole wheat flour, spices and cranberries.. the secret to this perfect cake is sparkling apple cider, it is folded in at the end. Topped with a lemon-apple cider glaze, and served with cranberry compote. With the holidays coming up, this cake fits any dinner or party.

Polenta Cookies with Pine Nut and Rosemary Nougatine

These are delicious, yet different. The cookie has a bite because of the polenta, and the nougatine has a caramel flavor, mixed with a mild pine nut taste, and a savory rosemary layer. Perfect as is, or a nice accompaniment to a delicious pudding.

Fresh raisin scones, topped with cranberry-blueberry homemade marmalade and fresh whipped cream. Also fresh shortbread, all enjoyed with some coffee or tea.

Pear and Almond Crostata with Cranberry Compote

This is a little personal size tart. Made with a delicious, flaky crust, half whole wheat flour in the crust, lined with some raspberry jam. Almond cream on top of that, then some sliced white wine poached pears. Served with caramel sauce, almond streusel, cranberry compote and fresh whipped cream.

Coconut Macaroons

So easy, seriously.
1 bag sweetened coconut
1 can condensed milk
4 egg whites whipped medium hard
Vanilla extract
Pinch of salt
I put these in cupcake wrappers so that they stay even more moist, instead of spreading on the sheet tray. This makes them perfect.
