#16. Traditional Vanilla Bean Sugar Cookies

You really can't go wrong with this traditional sugar cookie. These are rolled in colorful sugar sprinkles prior to baking. Include these in your cookie gift boxes like we did! This recipe makes about 3 dozen cookies.

Ingredients:

6 TB unsalted butter (at room temperature)

2 TB cold vegetable shortening

3/4 cup granulated sugar

2 vanilla beans

1 large egg

1 tsp. vanilla extract

1 1/4 cups all purpose flour

1 tsp. baking powder

1/2 tsp. salt

*Colorful sugar sprinkles (granules)


Method:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or foil.

Sift together flour, baking powder and salt. Set aside.

In the bowl of a mixer, cream together the butter, shortening and sugar until fluffy, about 3 minutes. With a knife, split vanilla beans halfwise and scrape out the seed centers. Add seeds to butter mixture and also add in the egg and vanilla extract until combined. Slowly add in the flour and mix until just combined. Refrigerate dough as is to use later or scoop dough using a small ice cream scooper and roll into a ball in your hands. Next, roll each ball in the sugar sprinkles. Place on the cookie sheet 2 inches apart. Bake 10-12 minutes, or until edges are slightly golden. Let cool.
