#3. Nutty Doughnut Bites

I know what you're thinking... these aren't cookies.. okay, no, but they are bite size, absolutely delicious. We kid you not. These are a must make. Granted, the ingredients don't sound very 'delicious', but these bites are everything that is holy in your mouth! They are moist, soft, with a crunchy bite, they have the perfect sweetness, a must try, seriously. Did we mention seriously? Emm, YES.

Here are some mouthwatering pictures to convince you. Ready?










In a large bowl put:
1 1/4C whole wheat flour
1C al purpose flour
1 1/2t baking soda
3/4t salt
1t ground cinnamon
1/4t mace
1C chopped toasted walnuts
1/4C wheat germ
3/4C rolled oats

In a smaller bowl put:
3 eggs beaten
1/2C dark brown sugar
1/8C honey
1/8C melted butter
1t lemon zest
1C buttermilk

Whisk. Add the wet to the dry and stir until fully combined. Cover the bowl with plastic wrap, and place in the fridge for 1 hour.

Glaze:
In a saucepan put:
1 1/2C powdered sugar
1/8C maple syrup
1t honey
1/2C water

heat on a medium high heat for about 10 minutes, let it bubble away. Pour into a bowl. Cool.

Get a medium size pan ready on medium heat, fill it half way with vegetable shortening at a steady heat.

Sprinkle a good amount of all purpose flour on a flat surface, put the dough on it. It will be soft, so make sure it is floured well to prevent sticking. With a rolling pin flatten it to about 1/2". Then make small doughnut hole circles with a 1" circle cutter. Put them into the oil until brown, then turn over to brown the other side. They should be golden brown, not dark, but be fully cooked.
Put them on a paper towel as they become ready, cool. Then dip one side into the glaze. When finished, dust powdered sugar on top.. and eat!

The dough can also be frozen, so you can enjoy doughnut treats in small amounts.
