#20. Spritz Butter Cookies

These cookies are simple, but very satisfying. They are so easy to make, but they are rich and buttery and hit just the right spot.

Ingredients:

1 1/2 cups unsalted butter (room temperature)

1 cup sugar

1 1/2 tsp. vanilla extract

1 tsp. almond extract

1 large egg

4 cups all purpose flour

1/2 tsp. baking powder

1/2 tsp. salt

powdered sugar (for dusting)


Method:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or foil.

In a bowl, sift together the flour, baking powder and salt. Set aside.

in a large mixing bowl, cream together the butter and sugar until light and fluffy, about 3 minutes. Scrape down the bowl. Add in the vanilla and almond extracts and the egg. Mix in well until fully incorporated. Slowly add in the flour mixture and only mix until the dough comes together. Using a small ice cream scoop, you may scoop small balls of dough, roll them in your hands and arrange them 3 inches apart on the prepared baking sheet. Using a fork, flatten the cookies to make a crosshatch design. If you would like to get fancy, you can use a piping bag and either a star or round tip to pipe the cookies into a 'S' shape or any other shape you desire. We used a large round tip to make 'S' shaped rustic-looking cookies.

Bake for 10-15 minutes, or until golden around the edges. Let cool. Once cooled, you can dust them with some powdered sugar and enjoy.


When cool, lightly dust with powdered sugar.
