Eierlikör

This is a traditional German liquor. It is made in the way a custard is made, using egg yolks, cream, milk and sugar, then dark rum is added at the end. It is a creamy liquor, and delicious as an after dinner shot, or poured over ice cream with some fruit. It thickens more when it is chilled. Try it.



In a bowl mix 3 egg yolks and 100g sugar with a whisk.
In a saucepan add 1 1/4C whole milk and 1/2C heavy cream with 1t vanilla extract.
Bring to a simmer, then stir the milk mixture in to the yolk mixture, whisking constantly, and pour it back in to the saucepan, again stirring constantly over low heat until it coats the back of the spoon. Then pour it through a sieve over a clean bowl. Add 1/2C dark rum and stir. Cover the bowl and let cool fully.
