Bananas Foster Doughnuts

If you love pastries with bananas, then you will love these doughnuts. They can be fried or baked, and the bananas make it moist enough, that they are delicious either way. Made with brown sugar, bananas and cinnamon, then topped with a delicious dark rum-cardamom cream glaze. So good.


These were made with a mini doughnut maker ($20), which makes these super fast and bakes them, if you don't have one, don't let this stop you, since who doesn't have a frying pan? Exactly.

Batter:

In a mixing bowl put:
1 3/4C all purpose flour
2t baking powder
1/2t salt
1t ground nutmeg
1/3C dark brown sugar
2T soft unsalted butter
1 egg
1/2C scalded whole milk
2T sour cream
1t vanilla extract
2 mashed bananas
1t ground cinnamon

Whisk these together till nicely combined, don't over mix.

If using a donut maker simply put the batter in as directed. Cool, dip in glaze. Repeat



If frying, heat vegetable oil in a pan on medium heat 360F is good.
Cut about 12 4x4" squares out of parchment paper. Put the batter in a piping bag with a large round tip, and pipe large circles on the paper. When the oil is ready, turn the paper upside-down and lay in the oil. Peel it off after a minute, when it will remove itself easily. Fry till golden brown. Blot on paper towels. Cool, then dip in the glaze.

Glaze:

In a bowl whisk till smooth:
1 1/2C powdered sugar
3T dark rum
1t ground cardamom
3T heavy cream
