These are a crunchy, yet soft and deliciously chewy blend of oatmeal cookies and chocolate chip, except kinda not.
Here's what you put in it:
In a large bowl put:
1/4C soft butter
1/3C sugar
1/3C dark brown sugar
1t vanilla extract
cream until light with a mixer.
add 1 egg, cream some more.
In a separate bowl put:
3/4C all purpose flour
1/3C rolled oats
1/2t baking soda
1/4t salt
5oz roughly chopped bittersweet chocolate
1/2C pecans, toasted and chopped
1/2C sweetened shredded coconut
Add the dry to the large bowl, mix until combined.
With a teaspoon spoon the dough out onto a baking sheet lined with parchment paper. Spread them out well, they will flatten and spread.
Bake at 350F for about 12-15 minutes. Until the edges are nicely browned, and the center is light.
