Mini Cupcakes are perfect for a wedding or baby shower! For this baby shower, we did 4 different flavors so everyone could try one of each. Red Velvet with Cream Cheese Icing, Coconut with Coconut Buttercream, Raspberry White Chocolate with Raspberry Buttercream and Peanut Butter and Jelly with Peanut Butter Buttercream. Each is decorated with love and care. The Red Velvets and Coconuts are topped with edible hand painted baby giraffe's and butterflies on fondant 'coins'.

This is a super easy cake to make, yet very tasty. It isn't baked, and the biscuits remain nice and crunchy, surrounded with a delicious buttercream, chilled, and then topped with melted chocolate. It is a traditional cake to eat in England, and remains popular.
